A new chef-driven dining concept has opened at 13/59 restaurant at Port Ferdinand Marina & Luxury Residences in Barbados, led by new chef Eric Drogueux.

He will work alongside maître d’hôtel Edouard Boutin.

Restaurant 13/59 is located in the heart of the marina at Port Ferdinand and now offers an urban craft style, with a touch of old world charm.

It promises to be a top foodie destination on the north-west coast of Barbados.

Drogueux was previously head chef at Restaurant Farniente & Lagoon by Jean Georges, in the prestigious St Regis Bora Bora Resort in French Polynesia.

He has also worked in the kitchen of Eric Frechon, three Michelin starred chef and Meilleur Ouvrier de France, and also at the Domaine de Murtoli in Corsica, as sous chef for the Michelin starred chef, Laurent Renard.

The new menu has a strong French influence mixed with Mediterranean selections and hints of Asia, reflecting Drogueux’s experiences and training in Europe and Polynesia.

A signature dish is scallops & prawns: spiny lobster bisque, with wild rice arancini.

The kitchen is a series of work centres, with bread and pastry made in the morning, the ovens fired up to high heat throughout the night service, then cooled down to braise and slow roast meats overnight for the next day’s service.

A lot of time has been taken to grow, research, and procure the ingredients used at 13/59, supporting local farmers and independent fishermen, bringing diners tasty and beautiful dishes of the highest quality.

Following the launch of 13/59 two years ago and following feedback from guests, the restaurant has been updated to present a more informal and welcoming interior, featuring earthy tones and red restaurant chairs.

The popular booth seats with pending lighting have been maintained for their warm and relaxed ambience.

Guests can also choose to reserve an outdoor dockside table, just feet from the water of Port Ferdinand marina.

The outside lounge area has also been revamped and is the perfect place for a sundowner during Happy Hour, or for after dinner liqueurs or coffees.
